Recipe: Oven-less Black Jack Tacos

Even though we are half-way through September, here in Nashville we are still battling the rentless, high-humidity 90 degree heat. So we have to try and keep cool however we can, and that includes keeping the oven off as much as possible. While I do love cool salads in the summertime, I am starting to crave something a little different. So now is the perfect time for my Oven-less Black Jack Tacos (the only cooking required is a quick 1-minute spin the the microwave to melt the cheese).

Tacos have always been one of my favorite foods. Even as a little girl, I loved how a small, only-one-hand-needed food could pack so much flavor into every bite. From the warm, soft tortilla to the perfectly seasoned meat to the slightly spicy salsa to the crunchy lettuce, nothing can really satisfy a craving for Mexican food quite like a taco.

Recipe: Easy Guacamole

What's not to love about guacamole? It's easy to make, a fun party dip, and full of healthy ingredients! Avocados, of course, are the main ingredient, and they are a great source of healthy fats that are important for heart health and for keeping your skin looking great. Tomatoes (rich in vitamin C), fresh cilantro (which contains zinc and vitamin A), and spices join the party to create the perfect, flavorful guac. Whether you spread it on toast or dip tortilla chips into it, guacamole is a must-have recipe.
