The Best Un-fried Fried Chicken

In the South, fried chicken is not just a favorite, it's a staple. Who can resist the crispy-on-the-outside, juicy-on-the-inside, flavorful entree that pairs perfectly with other traditional Southern dishes like greens and mashed potatoes? Homemade, made-from-scratch fried chicken is truly delicious, but it is also quite the undertaking. I've made homemade fried chicken, but just once, due to this lengthy process.

Two Must-Have Chili Recipes

The fall chill is finally in the air, which makes me crave hot and hearty meals. Nothing fits that bill better than a steaming pot of chili. In fact, October is National Chili month, so I teamed up with Bush's beans to create two new chili recipes inspired by different regions of the country.

Recipe: Garbanzo Bean, Chorizo, and Kale Soup

Although it is still just the beginning of September, there is already a chill in the air that hints of fall's coming. With the change of seasons comes football-filled weekends, colorful leaves falling in the breeze, and cravigns for soul-warming meals like soups, chilis, and casseroles. Personally, I not only love soups because they take the autumn chill off my bones, but also because they are a complete meal that comes together in one pot in a flash.

Healthy Hot Chicken Bowls

Recipe: Summer Gazpacho with Cannellini Beans

Summertime is one of my favorite times of the year for a lot of reasons, but one of the biggest is that it is the perfect time to go to the local farmers' market and return home with an abundance of fresh produce at its peak of flavorful ripeness. The only problem is that here in Tennessee it is also very, very hot this time of year, so heating the kitchen up to cook all those veggies often doesn't sound like such a great idea.

Recipe: Italian-Style Loaded Baked Potato

Who doesn't love a loaded baked potato? A warm, perfectly baked fluffy potato stuffed with all the best toppings is pretty irresistible. But what if it was packed with as much nutrition as it has flavor? I had both nutrients and taste in mind when I created this Italian-Style Loaded Baked Potato. It combines all the flavors you love in lasagna (think creamy cheeses, marinara, and Italian herbs) with a classic baked potato. The best part is it takes just minutes to make!

Do you have Bonegevity (bones built to last)?

Recipe: Pan-Glazed Chicken with Kale and Basil

There's not many things more popular to cook for a weeknight meal than chicken. It's easy to make, it's healthy, and it's pretty family friendly as most kids and adults like it. However, if I am honest, when I think of chicken, I often think, "Boring!." If you're like me and have ever been stuck in a rut of the same basic baked or grilled chicken, then you might feel this way too.

Recipe: Mini Meatloaves

Anything that is mini-sized is cute, don't you think? In cooking, making miniature versions of foods is also a great way to keep portions in check. As an added bonus, it often speeds up the cooking time. Those are just a few of the benefits of these mini meatloaves. Cooked in a muffin tin, they come together in less than half the time of a traditional meat loaf, are sized-just-right so you get to have 2 of them in a serving, and are cute and fun to boot, if I do say so myself!

Recipe: Chicken Cordon Bleu

Chicken Cordon Bleu is one of those dishes that you want to serve to company because everyone seems to love it, and it has that fancy feel. It is also surprisingly simple to make. The only problem is that traditional versions are typically loaded with calories.
