Recipe: THE BEST Roast Beef Melt

Sometimes nothing sounds better than a good sandwich. When built correctly, it can not only serve as a meal-in-one (whole grain bread = healthy carbs and fiber; lean meat = protein; lettuce, tomato, onion, mushrooms, etc. = veggies; spreads, cheese, etc. = fats). And let's be real--what is more comforting than enjoying flavorful, savory meat and ooey-gooey cheese melted on warm, soft bread?

The good news is that there is no need to write off this American lunchtime favorite in order to have a healthy diet! Just follow the simple formula of combining whole grain or sour dough (Want to know why sour dough bread makes the list? Watch this video.) bread, flatbread, or wrap with lean meat (deli or baked ham, chicken, turkey, or roast beef--look for low sodium when possible) and 1 fat (1 slice cheese, 1 tablespoon canola or olive oil mayo, or 1/4 avocado) and plenty of veggies, and you'll be good to go. THE BEST Roast Beef Melt:


2 slices 100% whole wheat bread

3oz. deli sliced roast beef

1 teaspoon olive oil

1/2 cup sliced fresh mushrooms

1/2 cup sliced yellow onion

1 slice swiss or provolone cheese

3 slices raw red onion, optional

Black pepper, to taste

Arugula, to taste

Mustard, to taste


Heat olive oil in a nonstick skillet over medium-high heat. Add mushrooms and yellow onions and saute until softened and onion turns slightly golden-brown. Remove from heat and set aside. Top a slice of the whole wheat bread with the roast beef, mushroom and onion mixture, and the other slice of bread with the slice of cheese. Place under broiler and, watching closely, remove the two slices of bread when slightly toasted and cheese has started to melt. Top with red onion (if desired) and black pepper, arugula, and mustard, to taste. Serves 1. Enjoy!
