Recipe: Pork Medallions with Buttery Green Beans

Pork tenderloin is known as "the other white meat" for a reason. It's just as lean as skinless chicken breast, but it also provides more vitamins and minerals than chicken, and in my opinion, more flavor as well! Plus, a meal featuring pork tenderloin feels hearty and comforting without being too heavy. In this recipe, I slice a pork tenderloin into medallions and bread it with panko breadcrumbs so that it cooks up quickly while still staying juicy and flavorful.

Recipe: Summer Gazpacho with Cannellini Beans

Summertime is one of my favorite times of the year for a lot of reasons, but one of the biggest is that it is the perfect time to go to the local farmers' market and return home with an abundance of fresh produce at its peak of flavorful ripeness. Eat Two of These WHOLE Pizzas for Less than 250 Calories! (Recipe)

It's Friday! Woo-hoo! If you're like me, Fridays brings back memories of pizza parties and sleepovers. I remember as a teenager when I thought eating anything with fat was a bad thing (this is called fat phobia and many of us who were around in the '90's had it thanks to the marketing of fat-free everything), I thought that the only way to make pizza healthier was to elimate the fat in it by topping it with fat-free cheese.

Recipe: Fiesta-Style Stuffed Bell Peppers

Some weeknights, I am just beat and even a 30-minute recipe sounds like too much to take on. This used to mean take-out would be my go-to option on those weary evenings. But then I realized that taking the take-out route was happening more nights than I intended, and it wasn't doing my wallet or waistline any favors.
